Baingan Bharata
Baingan Bharta is a popular Indian dish made from roasted and mashed eggplant (baingan), cooked with aromatic spices, onions, tomatoes, and other flavorful ingredients. It is a flavorful vegetarian option enjoyed with various Indian bread like roti or naan.
Ingredients:
1 large eggplant (baingan)
1 onion, finely chopped
2 tomatoes, finely chopped
2 green chilies, finely chopped
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
Salt to taste
Fresh coriander leaves for garnish
2 tablespoons oil for cooking
Instructions:
Roast the whole eggplant on an open flame or in the oven until the skin is charred and the flesh is soft. Let it cool, peel off the skin, and mash the pulp.
Heat oil in a pan, add cumin seeds, and let them splutter. Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and green chilies. Sauté for a minute until the raw aroma disappears.
Add chopped tomatoes, turmeric powder, red chili powder, and coriander powder. Cook until the tomatoes are soft and the oil starts to separate.
Add the mashed eggplant and salt. Mix well and let it simmer for 10-15 minutes, allowing the flavors to meld.
Garnish with fresh coriander leaves and serve hot with roti or rice.
