Creamy Mushroom Soup

Ingredients:
1 lb (450g) mushrooms, cleaned and sliced
1 onion, finely chopped
2 cloves garlic, minced
4 cups vegetable or chicken broth
1 cup milk or cream
2 tablespoons butter
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
In a large pot, melt the butter over medium heat. Add onions and garlic, sauté until softened.
Add sliced mushrooms and cook until they release their moisture and turn golden brown.
Pour in the broth and bring the mixture to a boil. Reduce heat and simmer for 15-20 minutes.
Use an immersion blender to blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the mixture to a blender in batches.
Stir in milk or cream, and season with salt and pepper to taste. Simmer for an additional 5-10 minutes.
Ladle the soup into bowls, garnish with fresh parsley, and serve hot.
