Cabbage/Kobichi Bhaji
Ingredients:
1 small cabbage, finely shredded
1 large onion, finely chopped
2 tomatoes, finely chopped
1 tablespoon ginger-garlic paste
2 green chilies, finely chopped
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon red chili powder (adjust to taste)
Salt to taste
2 tablespoons oil
Fresh coriander leaves for garnish
Instructions:
Finely shred the cabbage and set it aside.
In a pan, heat oil. Add cumin seeds and mustard seeds. Let them splutter.
Add chopped onions and green chilies. Sauté until the onions turn golden brown.
Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
Add turmeric powder, coriander powder, red chili powder. Mix well.
Add chopped tomatoes and cook until they are soft and the oil starts to separate from the masala.
Add the shredded cabbage to the pan. Mix well with the masala.
Add salt and let the cabbage cook on low heat for 15-20 minutes until it is tender but still has a bit of crunch.
Garnish: Garnish with fresh coriander leaves before serving.
