Chole-Bhature
Chole Bhature is a popular North Indian dish consisting of spicy chickpeas (chole) served with deep-fried bread (bhature). Here’s a basic recipe along with some information:
Chole (Spicy Chickpeas) Recipe:
Ingredients:
1 cup dried chickpeas (soaked overnight)
1 large onion, finely chopped
2 large tomatoes, pureed
2 green chilies, finely chopped
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala
Salt to taste
2 tablespoons oil
Fresh coriander leaves for garnish
Instructions:
Cook Chickpeas: Rinse the soaked chickpeas and pressure cook with enough water and a pinch of salt until they are soft.
Prepare Chole: Heat oil in a pan, add cumin seeds, and let them splutter.
Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and green chilies. Sauté for a minute.
Add tomato puree and cook until the oil separates from the masala.
Add Spices: Add coriander powder, turmeric powder, red chili powder, and salt. Mix well.
Cook the masala until it releases oil.
Add Chickpeas: Add the cooked chickpeas along with its water. Adjust the consistency as per your liking.
Simmer on low heat for 15-20 minutes until the flavors are well absorbed.
Finish with Garam Masala: Add garam masala and cook for an additional 2-3 minutes.
Garnish with fresh coriander leaves.
Bhature (Fried Bread) Recipe:
Ingredients:
2 cups all-purpose flour
1/2 cup semolina (sooji)
1/2 cup yogurt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
Salt to taste
Water (as needed)
Oil (for frying)
Instructions:
Prepare the Dough:
In a mixing bowl, combine all-purpose flour, semolina, yogurt, baking powder, baking soda, and salt.
Knead into a soft dough using water if needed. Let it rest for 2-3 hours.
Roll and Fry Bhature:
Divide the dough into small balls and roll them into flat discs.
Heat oil in a deep pan for frying.
Fry each rolled bhatura until it puffs up and turns golden brown.
Serve the hot and spicy chole with the crispy bhature. You can also accompany it with sliced onions, lemon wedges, and green chutney.
Tips:
You can add amchoor (dry mango powder) for a tangy flavor.
Adjust the spice levels according to your taste.
Ensure the oil is hot enough before frying bhature to get the perfect puffiness.
