Dahi Bhindi (Yogurt Okra) Curry

Ingredients:
250g Bhindi (Okra), washed and trimmed
1 cup Yogurt (whisked)
1 large Onion, finely chopped
2 Tomatoes, finely chopped
1 tsp Cumin Seeds
1 tsp Coriander Powder
1/2 tsp Turmeric Powder
1/2 tsp Red Chili Powder (adjust to taste)
1/2 tsp Garam Masala
Salt to taste
2 tbsp Cooking Oil
Fresh Coriander leaves for garnish
Instructions:
Prepare the Bhindi: Cut the bhindi into 1-inch pieces. If the bhindi is too long, you can cut them in half.
Heat 1 tablespoon of oil in a pan. Add the bhindi pieces and sauté on medium heat until they are cooked and turn slightly crispy. Set aside.
Prepare the Yogurt Mixture: In a bowl, whisk the yogurt until smooth. Add turmeric powder, red chili powder, coriander powder, and garam masala. Mix well and set aside.
Cooking the Curry: In the same pan, add the remaining oil. Add cumin seeds and let them splutter.
Add finely chopped onions and sauté until they become golden brown.
Add Tomatoes: Add the finely chopped tomatoes and cook until they become soft and the oil starts to separate.
Combine Yogurt Mixture: Lower the heat and slowly add the yogurt mixture to the pan, stirring continuously to prevent curdling.
Add Bhindi: Once the yogurt mixture is well combined with the onions and tomatoes, add the sautéed bhindi to the pan.
Simmer: Let the curry simmer on low heat for 8-10 minutes, allowing the flavors to meld and the bhindi to absorb the yogurt mixture.
Season and Garnish: Season the curry with salt according to taste. Garnish with fresh coriander leaves.
Serve: Serve the Dahi Bhindi Curry hot with chapati, naan, or steamed rice.
