Okra (Bhendi) Masala
Ingredients:
2 cups chopped okra (bhindi)
1 onion, finely chopped
1 tomato, chopped
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
Red chili powder to taste
Salt to taste
Instructions :
Wash the okra thoroughly and pat them dry with a kitchen towel.
Trim the ends and chop them into approximately 1-inch pieces.
Heat a couple of tablespoons of oil in a pan on medium heat.
Add the chopped okra to the pan and sauté until they are cooked and slightly crispy. Stir occasionally to ensure even cooking. This step helps to reduce the sliminess of okra.
Once the okra is cooked, remove it from the pan and set it aside.
In the same pan, add a bit more oil if needed.
Add cumin seeds and let them splutter.
Add chopped onions and sauté until they turn golden brown.
Add turmeric powder, coriander powder, red chili powder, and salt to the onions. Mix well.
Add chopped tomatoes to the spice mixture. Cook until the tomatoes are soft and the oil starts to separate from the masala.
Once the masala is well-cooked, add the sautéed okra back into the pan. Mix gently to coat the okra with the masala.
Cook for an additional 5-7 minutes on medium heat, allowing the flavors to meld. Stir occasionally to prevent sticking.
Taste and adjust the seasoning as needed. Add more salt or spices if required.
Once the okra is coated well with the masala and has a rich flavor, remove it from heat.
Garnish with chopped cilantro if desired. And Serve Warm Okra Masala hot with roti, naan, or steamed rice.
