Quinoa and Black Bean Salad

Ingredients:

1 cup quinoa, rinsed and cooked
1 can (15 oz) black beans, drained and rinsed
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
Juice of 1 lime
2 tablespoons olive oil
Salt and pepper to taste
Instructions:

In a large bowl, combine the cooked quinoa, black beans, cherry tomatoes, cucumber, red onion, and cilantro.
In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss until well combined.
Refrigerate for at least 30 minutes to allow the flavors to meld.
