Sesame Seeds and Spinach Stir-Fry

Ingredients:
2 cups fresh spinach leaves, washed and chopped
2 tablespoons sesame seeds
1 tablespoon sesame oil
1 teaspoon minced garlic
1 teaspoon soy sauce
1 teaspoon rice vinegar
1/2 teaspoon sugar (optional)
Salt and pepper to taste

Instructions:
Toast Sesame Seeds: In a dry skillet, toast the sesame seeds over medium heat until they become golden brown and fragrant. Be careful not to burn them. Once done, set them aside.
Prepare Spinach: Wash and chop the fresh spinach leaves.
Stir-Fry: Heat sesame oil in a pan or wok over medium-high heat.
Add minced garlic and sauté for about 30 seconds until it becomes fragrant.
Add the chopped spinach to the pan. Stir-fry for 2-3 minutes or until the spinach wilts and reduces in volume.
Seasoning: Add soy sauce, rice vinegar, sugar (if using), salt, and pepper. Stir to combine.
Add Sesame Seeds. Sprinkle the toasted sesame seeds over the stir-fry and toss everything together. Cook for an additional minute.
Serve in a serving dish. Optionally, garnish with a few extra sesame seeds for presentation.
