VITAMIN C

Vitamin C is a white crystalline water soluble vitamin, it is easily destroyed by cooking and contact with alkalis, and it can be easily oxidized. Ascorbic acid is also lost to some degree if food is deep frozen or preserved. 

Functions of Vitamin C 

1.Vitamin C helps in Formation of collagen and collective tissues.

2. Vitamin C also helps in maintaining the strength of capillary walls 

3.Vitamin C aids in absorption of dietary iron 

4. Vitamin C also improves resistance to infection and helps fight diseases such as high blood pressure, cancer and arteriosclerosis. Vitamin C improves the function of white blood cells called phagocytes. The role of phagocytes in human is to find , destroy and consume viruses, bacteria and cancer cells. Vitamin C also activates white blood cells called neutrophils and increases the level of antibodies found in the blood, in connection with elevated levels of cellular protein interferon, which attacks viruses.   

Sources of Vitamin C 

Vitamin C is presesnt in citrus fruit , berries , tomatoes , fresh green vegetables, potatoes ,peppers, broccoli, cauliflower, some fruit juices and chillies.
