Ingredients:

4 large red bell peppers
1 cup cooked quinoa or rice
1 cup black beans (cooked or canned)
1 cup corn kernels

Salt and pepper to taste
Shredded cheese (optional)

Instructions:

Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds.
In a bowl, mix cooked quinoa/rice, black beans, corn, diced tomatoes, onions, chili powder, cumin powder, salt, and pepper.
Stuff the bell peppers with the mixture and place them in a baking dish. If desired, top with shredded cheese.
Bake for 25-30 minutes or until the peppers are tender.
Garnish with chopped cilantro before serving.
